100% Pineau d'Aunis.
This wine comes from the 12 oldest rows of Pineau d'Aunis on the Bellivìere estate, up to about 100 years old at this point. These vines are crucial not just for the minute amount of very concentrated, complex wine they yield but also as a source for massale cuttings for the rest of the Bellivière Pineau vineyard. The farming is certified-biodynamic and all work including harvest is by hand. The berries are partly destemmed and partly left in whole clusters and foot-trodden in tank. The juice is fermented spontaneously with indigenous yeasts and a maceration of up to a month. The wine is aged in old 500-liter demi-muids for a year and bottled without fining or filtration. The wine is made (not even in every vintage) and named in honor of the local mentor of Eric and Christine Nicolas, Louis Derré, who helped them find their footing and some vines of their own when they first turned up in Jasnières as outsiders in a very insular wine region.
