VILLAGE: Santiago Matatlán, Oaxaca
OVEN / FUEL: Earthen pit / black oak
MILL: Tahona
FERMENT: Wild fermented in pine vats for 7-13 days (with bagasso)
DISTILLATION: 2x in 300 liter alembic of copper (with bagasso)
