Cave Dew is composed of 100% Pinot Noir from two organic Santa Cruz vineyards, one coastal tucked among the redwoods, and the other with a steep southern exposure (read: ripe fruit!) Vinified 50% whole cluster (for crunchy fruit) and 50% destemmed (for structure), then aged in old French oak. James' goal here was to produce a Burgundian-style Pinot in homage to the ones he fell in love with in his wine drinking youth.

- After completing his degree in Oenology at UC Davis, James studied winemaking all over the world for 10 years before starting his own project in Santa Cruz.
- After harvest, the juice was split into thirds and direct pressed, destemmed, and fermented whole cluster prior to being aged sur lie in oak.
- This wine was made without any sulfites, fining or filtering.
