Nero d’Avola was foot treaded before an overnight maceration, then pressed off. Vermentino was whole cluster direct pressed, then blended with the Nero d’Avola rosato base.
100% native yeast; fermented completely dry and racked off heavier lees at the end of fermentation
Aged in neutral vessels for 6 months before bottling
Unfined and unfiltered (sediment expected)
