These vines are planted at high density, on their own roots in limestone soils at the Stolpman Vineyard that was recently certified Demeter biodynamic. The grapes were picked over two separate picks, then foot tread to soak on the skins overnight before being whole bunch pressed the next morning. The juice was collected into old french oak barrels and fermented with native yeast and bacteria. The wine aged on lees for 8 months, then was racked for the first time to bottle, without fining or filtration, with minimal sulfur used. 360 cases produced.
