Domaine du Pech 'Le Pech Abusé' 2016 comes from a family-run estate located in Sainte-Colombe-en-Bruilhois, at the southeastern edge of the Buzet appellation. The estate was planted in 1978, and in 1997, Magali Tissot (cousin of Stéphane Tissot) and her partner Ludovic Bonnelle took over. 

This wine is a blend of 40% Merlot, 40% Cabernet Franc, and 20% Cabernet Sauvignon. The grapes are macerated in wooden vats for nearly 30 days. Afterward, the wine is aged for four years in 10,000-liter oak foudres, allowing it to develop a deep, complex character.

I don’t eat much meat in the U.S. (my partner is vegetarian), but during my recent trip to Spain, I feasted on gamey dishes like quail, cabrito, and lechazo — perfect pairings for the Pech.
