Due to a devastating spring frost, crop levels were severely reduced. The lower crop levels were able to achieve more ripeness than normal. With Catawba crop being so small, we decided to harvest it at the same time as the Concord and co-ferment the two together. The grapes were hand-picked October 8/9th, then destemmed and pressed. Of course the wine was fermented with spontaneous yeast at ambient cellar temperature. The fermentation lasted 3 weeks, then it was bottled and stayed 5 months in the bottle on lees, than manually disgorged. No sulfur dioxide added at any moment.

Of course you can trust Nathan to make a delicious wine. I must say it is really interesting to see the catawba’s aromas balancing out the concord : it is all about hibiscus, wild raspberry, rhubarb, pink & black peppercorn. As usual, the wine is very low alcohol, and just about totally delicious and crunchable - it remains the perfect pool wine. But with time, vintage after vintage, we continue to see a balance of ripeness and acidity, with very gentle tannins, that we can probably start to associate to the terroir of Buzzard’s crest.

Any way, we think it is a really good version of chëpìka.
