Fourth generation vigneron Nicolas Maillet is deeply proud of his home village of Verzé, located northwest of the city of Macon. The Verzé vineyards lie on chalky, limestone-centric, and generally eastern-facing slopes, and are the source of some of the most mineral-driven, high-acid wines of the region.
Maillet organically farms six hectares of Chardonnay, the youngest of which are 50 years of age, as well as two hectares split evenly between Aligoté, Pinot Noir and Gamay.
In the cellar, Maillet is adamant that slow, cool, wild yeast fermentations are the key to making energetic, long-lived wines. Textured, powerful and vibrant, Maillet’s wines show the true potential of the region.
