Ramiro Ibáñez is part of a new generation of Jerez winemakers reviving the region’s forgotten traditions, including as a member of Manifesto 119, a collective dedicated to preserving the 119 grape varieties documented in the early 1800s. Inspired by the unfortified wines made in Jerez before the dominance of Sherry, Ramiro focuses on old-vine Palomino bottled by individual pagos (vineyards), allowing the region’s albariza soils to take center stage.

This wine comes from three parcels of 35–110-year-old vines in Pago Miraflores Alta and Baja, planted across a mix of Lentejuelas, Lustrillos, and Tosca Cerrada albariza soils. Hand-harvested grapes are whole-cluster pressed into old Manzanilla botas, where they ferment spontaneously without temperature control and rest for nine months, developing a brief veil of flor. The result is a deeply expressive Palomino with saline minerality, chalky texture, and the quiet complexity that defines Ramiro’s vision of Jerez.

Ramiro is one of the most knowledgeable winemakers in the Marco de Jerez, the storied region in southern Spain. A Jerez native, he graduated with a degree in enology and spent 3 years working around the world before returning home in 2009. In 2012 was able to start his own project initially called “Cota 45 .” In the years since he has seen intense growth, both for the project and for the whole of the sherry region, finally putting his own name onto his project with the 2023 vintage. Ramiro’s advocacy for site -specific wines and a greater attention to the region’s terroir has helped shift the conversation about Albariza, Palomino Fino, and the whole Marco de Jerez. He is an advocate for the preservation of history, a student of the soil, and is passionate about producing wine that truly reflects the distinctive terroir of this extraordinary region. In addition to the UBE wines, Ramiro also has a very interesting take on some of the more “typical” wines of Jerez. “Agostado” is his interpretation of how Palo Cortado was produced in centuries past. He makes sweet wine under the “Pandorga” label from Pedro Ximenez or Tintilla de Rota, with grapes sun -dried using the Asoleado method before pressing.
