This pét-nat from the Jura is made entirely from Seyve-Villard, a nearly forgotten hybrid grape developed in France during the early 20th century. Once widely planted, the variety all but disappeared as French wine regulations favored traditional vinifera grapes. Today, a small group of natural winemakers— including Didier Grappe — are helping revive it.
Drawn to the grape's remarkable disease resistance and ability to thrive without treatments, Grappe planted Seyve-Villard more than a decade ago and has become one of its most vocal champions. A founding member of Vitis Batardus Liberata, an association dedicated to preserving and promoting hybrid varieties, he sees these grapes as an important part of a more sustainable future for wine.
Produced using the ancestral method and bottled without added sulfur, filtration, or fining, this is sparkling wine in its purest form. The result is a softly sparkling pét-nat with a creamy texture, bright acidity, and a distinctive mix of orchard fruit, herbs, and Jura minerality.
