100% Catarratto
The grapes are destemmed and macerated on the skins for 5 days then ferment with indigenous yeasts in stainless steel tanks. After malolactic fermentation, the wine is decanted and racked off its gross lees. It then ages in concrete until it's bottled in the spring following harvest
