This blend is Macabeu and Xarel-lo from two adjoining parcels in Penedes (aka the home of Cava). The grapes are spontaneously fermented in stainless steel and French oak, and then bottled before the fermentation is complete. Lightly toasty with crispy orchard fruit and enthusiastic bubbles, this is a perfect stand-in for Champagne.
