Ramiro is one of the most knowledgeable winemakers in the Marco de Jerez, the storied region in southern Spain. A Jerez native, he graduated with a degree in enology and spent 3 years working around the world before returning home in 2009. In 2012 was able to start his own project initially called “Cota 45 .” In the years since he has seen intense growth, both for the project and for the whole of the sherry region, finally putting his own name onto his project with the 2023 vintage. Ramiro’s advocacy for site -specific wines and a greater attention to the region’s terroir has helped shift the conversation about Albariza, Palomino Fino, and the whole Marco de Jerez. He is an advocate for the preservation of history, a student of the soil, and is passionate about producing wine that truly reflects the distinctive terroir of this extraordinary region. In addition to the UBE wines, Ramiro also has a very interesting take on some of the more “typical” wines of Jerez. “Agostado” is his interpretation of how Palo Cortado was produced in centuries past. He makes sweet wine under the “Pandorga” label from Pedro Ximenez or Tintilla de Rota, with grapes sun -dried using the Asoleado method before pressing.
