Gilles' sparkling is built on the back of Chardonnay, Chenin Blanc, and a bit of Mauzac. Production in this area does also allow for Pinot Noir to be added to the Crémants, but they opt against it in most years. The wine is made in the methode champenoise, undergoing two fermentations as opposed to the one for methode ancestrale. The wine is a stunning gold in the glass, and the fruit profile matches this brilliant color, offering a nose of golden apple, dried yellow fruit, honey, and citrus. The acidity on this wine is elegant and fine, while maintaining a persistence cutting through the rich mousse of this sparkler.
