A labor of love from the Languedoc.
This blend of Merlot/Cinsault and other indigenous red varieties from the Languedoc was farmed organically on top of a rocky cliff face called d’amour dur or “tough love.” The fruit was hand picked prior to being crushed and macerated separately in concrete vats. The resulting wine has aromas of smoky rich black fruit, and is liquid proof that the struggle was worth it.
- Les Hautes Terres is a parcel within the Aude Valley that is farmed by Geneviève and Gilles Azam.
- They live and work on top of a 600M mountain that overlooks land that was once occupied by armies of Emperor Charlemagne.
- They have been building this Domaine for 20 years, and assist younger winemakers in the area.
Vibes with:
- Blackberry balsamic herbed pork tenderloin.
- Climbing mountains.
- Victory toasts.
