"I have a couple cases of this wine, which I don't really sell. Borja and I like to use it to demonstrate how Listan Blanco marks time. 100% Listán Blanco from Finca El Caramelo, a 1ha vineyard in Icod de los Vinos, planted at 450 meters altitude on steep rocky terraces of basaltic sandy loam, trained in the parral alto (high pergola) formation typical of the zone. Grapes were harvested in 2016, destemmed, fermented in stainless steel with 40 days of skin maceration followed by 12 months aging in used 228L French oak barrel, then bottled in January 2018 with light filtration. Borja then aged Impares #3 another 5.5 years in bottle before release. 290 bottles produced."

A textured skin contact white that has salinity, density and texture. It will be a spectacular food wine.
