Ya-Yeh is composed of 100% Sauvignon Blanc fermented and aged in concrete eggs with two weeks of skin contact. These egg-shaped fermenters preserve acidity and encourage lees suspension, yielding a textured wine with plenty of body. Why the chicken on the label, you ask? Because eggs are the perfect shape - and also the perfect food (despite the fact they seem to be in short supply these days.)
- Matija Žerjav - aka Matic - is a third generation winemaker, who took over his family’s vineyard at the tender age of 24.
- The winemaking area in Štarjeska is in the “mountain wine zone,” and it gets very cold here, with a strong diurnal shift.
- The property’s 9 hectares of vines are farmed organically, with occasional biodynamic farming practices.
- The wines are kept in an old cellar from 1852 that is completely underground.
