Produced by Corta y Raspa, a collective of four traditional mayetos (winegrowers) in Sanlúcar de Barrameda, this wine comes from a single organically farmed vineyard of old vines within one of the region's historic pagos. Hand-harvested 100% Palomino Fino ferment spontaneously with native yeasts in seasoned Manzanilla casks, then age for approximately nine months before being bottled unfined and unfiltered with only a minimal addition of sulfur. The result is a vibrant, terroir-driven expression of Sanlúcar, combining bright citrus, saline minerality, and subtle herbal notes with remarkable freshness and texture.
